My mother grew up next to some of our states best peach orchards and because of that I never knew what a tin can of peaches tasted like until I was well into my 30’s. Every summer while I was growing up there were several days set aside for canning the beautiful homegrown fruit and of course making things like peach ice cream, peach cobbler and peach pie.
Somewhere along the line I fell out of the peach canning tradition. If my memory is correct it seems like someone in my family told me that they preferred peaches canned from the store and that was all it took for me to give it up. I was busy and clearly too easily swayed. Home canned peaches are superior anyway you toss the dice.
I’ve been canning peaches this week. It does take some effort, but it’s quite enjoyable. The music was turned up and I loved the smell of the peaches on the stove. I took a refresher course from Frieda, who is a whizz at canning. My simple syrup was made from 8 cups of water and 2 cups of sugar.
With a few peaches I made a cobbler that is delicious. I found the recipe on Jamie’s blog. The lemon zest just sent this over the edge and the biscuit was very tender. I recommend it highly.
If you have been thinking of canning peaches, just take a stab at it. You’ll thank yourself every time you open up a jar.
Ain't it the truth. We just finished peaches - still working at tomatoes, sauce, pears, and applesauce. Autumn is the best!

ReplyDeleteI think canning your own is such a wonderful alternative to the chemicals that leach out of canned foods anyway! So well worth the time and effort. Okay, now I need to do something about that! Idaho peaches are in our market right now and they are wonderful.

i have been canning most of the fruit from my garden for several years. straw-blue-black berries. peaches. pectin-free!!... this year my apple tree has fruited sufficiently to start canning them. i started in my twenties and will never stop. i have nectarines and plums but not sure if they make good jam?? for all those people who like store bought...when you enter the store go to the produce area. close your eyes and inhale deeply through your nose... if you can not identify one fruit, go home and plant your own. fruit has the most wonderful smell. fresh off the tree..juicy and sweeeeeeeeeeet.

ReplyDeleteI have canned peaches ONCE in my lifetime! My daughter canned some this year and I was the lucky recipient of some of hers:) Next year I do plan on joining her. Your cobbler is calling to me....:)

I , too, have been the recipient of the delightful comment about canned peaches - so I only freeze them now. I just finished up my pears - mmmm - I almost wish some wouldn't seal so I had a reason to eat them now.

ReplyDeleteI am convinced that the smell of peaches is one of the most intoxicating smells. I imagine for you it also brings you back to childhood. I bought some canning equipment awhile back and wanted to try my hand at it all. Then I started reading about canning safety, got scared, and ended up returning it all to the store. I should just get over my fears because I know I would love to have these canned peaches around. The thought of seeing them all lined up in my pantry would make me very happy:)

ReplyDeleteOh I wish I could get over my mental block of putting things in jars, I'm always so impressed by other people who manage to do it. I have never seen bottled peaches outside of Enid Blyton books but they sound wonderful.
