Aloha Cake

One night I got a call from one of my daughters asking me to come over to her house for a minute. When I got there she had a piece of cake waiting for me that was out of this world delicious. It was a coconut four-layer cake with lime curd filling and a frosting made with coconut milk. Oh it was good. Ever since then I’ve had coconut cake on the brain. I’ve made my own version now that started from Dorie Greenspan's Coconut Tea Cake. I must admit it wasn’t quite as good as the original cake with the lime curd but it has it’s own flare and those that tried it said it should be put on the blog. It was very moist and it did get better as it matured. I would hold this cake tightly wrapped a day before frosting.



This would make a lovely Mother’s Day dessert. What will you be serving for dessert on Mother's day?

  9. So my friend is obsessed with coconut so I was so excited to make her this cake when I saw it. But then I realized that she is allergic to pineapple. (Such a sad combination of love and hate) So I'm wondering if you have any suggestions. If there is a similar cake with the coconut but without the pineapple or if there is a fruit that could be substituted. I know it wouldn't be the same but then I couldn't make it for her.

  10. Connie, you are so kind to be thinking about your friend. What a sad thing to be allergic to pineapple! But to answer your question, yes- the cake recipe I started with was a wonderful version of a coconut tea cake by Dorie Greenspan. You can find her recipe by going to Carmen's blog at this address. She hosted a cooking group where they cooked this recipe, so it is online with Dorie's permissioin. Let me know how it goes- your friend is very lucky!
