Fresh Strawberry Dressing

How many times have you gone to a wedding or baby shower and had the same old tired salad and wished for something fresh and new? This salad dressing is the invention of just such an occasion. I was in charge of the food for a bridal shower for a dear friend and wanted something unique and wonderful and this is the dressing that I came up with. I hope you enjoy it as much as it was the evening we served it. The rest of the recipe will appear shortly, but I've had too many requests for this dressing to wait any longer! The key ingredients here are FRESH BERRIES and oregano.

  1. That looks soo yummy! I have some strawberries that are not quite OK enough for just eating, and don't look all that pretty for Strawberry Shortcake. This recipes would be perfect....I might try it tonight!

  2. Anjie, what a great idea! Sometimes those berries just sit around until you have to throw them out, this is a perfect way to use them! Let me know if you like it and beware, kids think it's pink frosting . . .

  4. I made the dressing this evening (with FRESH berries) and it was a hit! I used a Spring Mix from Costco and added grape tomatoes and cucumbers. Feta cheese and sunflower seeds on the side, made a big difference too! Now I am anxiously waiting the full "salad" recipe to see what was in your "greens"!
