Beautiful Bear Lake & Cobb Sandwiches and Basil Mayonnaise from Foster's Market Cookbook

This past weekend my extended family spent time together at our favorite gathering place, Bear Lake. The blue water always makes me feel younger than I am and reminds me of how much I love my family. I’ve been going there since the day I was born, my ancestors helped settle the area in the 1860’s. What about the color of this lake?

What family reunion doesn’t include food? We spent a wild and windy day on the North Shore trying to boat and jet skiing on Friday afternoon where we had lunch out of coolers. I brought a sandwich filling that turned out to be quite delicious and a perfect travel meal. The idea began from a cookbook loaned to me from a dear friend, Bonnie. The original recipe called for layering the ingredients like a regular sandwich, I decided for ease on the beach to make it into a filling. The basil mayonnaise that I used came from The Foster’s Market Cookbook as well. So far all the recipes I’ve tried from this book have been excellent, I may have to get my own copy.


We ended up eating the filling in some creative ways. As sandwiches, lettuce wraps and just as salads! If you do eat it on a day of high wind on a beach, remember to hold on the top of your sandwich it may blow away . . .

  1. Bear Lake is so beautiful. So glad that you had a wonderful family weekend at the cabin. How creative to mix the sandwich fillings up for ease of serving. It looks wonderful. I have not tried this recipe but it looks so good that I think I need to.

  6. I read down the ingredient list and it just kept getting better and better...and basil mayonnaise? Oh, my! DELICIOUS!
    What a beautiful setting for a family reunion!
    If the weather is warm, I like watermelon at the beach:)

  8. How neat you have roots so far back Cristie! Bear lake is beautiful. I love how blue the water is there.

    I think my favorite thing to bring to a picnic is pie. The art of the picnic seems to be getting lost somehow as we head to the local deli for our food. I'd like to see this tradition come alive again.

  9. that mayo sounds fabulous! yummy! if i am at bear lake... you had better believe it's a raspberry shake i am eating! if i am on an ocean beach... we love to take a picnic of breads/meats/cheeses and fruit :) sounds like you had a lovely time.

    at the beach or lake just a simple picnic works: crusty bread, cheese wedge, a ripe tomato, some dried fruits and nuts
    the cobb sandwich looks like a winner.

    I am thinking of a version of a Cobb salad for dinner tonight but the sandwich version and basil mayonnaise are going in my recipe file!

  14. Mom made this last weekend for the office Bear Lake "Get-Away" and I took some of the few leftovers to Aaron for lunch the next day. I loved it! He loved it! Everyone who tried it loved it! It's a great combination!
