The Best Way to Eat a Ginger Cookie

We've been taking ginger cookies on vacations for years.  You can make them the day before, freeze them a head of time and they hold up well for several days in an air tight container.  But, if you want to make a really beautiful cookie that tastes melt-in-your mouth wonderful, try dipping one of these soft cookies in some white chocolate!  They are hard to beat.  If you want an extra nice surprise with your cookie, make it into an ice cream sandwich and serve it with warm carmel sauce.  Honestly, it doesn't get any better than that.  Which way do you want your cookie?
